chanelespadrilles2going into my second semester of sophomore year, influenced by the new year, i made a list of things i wanted to do: get up earlier, wear high heels, read more, go on adventures, and so on… at the end of the school year i made another list, which was more realistic and a result of my second semester experiences. tumblr_mksz9j8IrD1qjhe3mo1_500

  1. i can drink coffee… if i add in more than an equal share of milk and vanilla flavoring and ice. lots of ice.
  2. i am at my most productive when I am listening to certain pandora playlists: oldies and rap. to be more specific: american pie, with or without you, and losing my religion playlist or 99 problems, hypnotize, a$ap rocky, and kanye west and jay-z. can’t study without them.
  3. i can’t function on less than five hours of sleep. i can try (which I have), but by the end of the day, or nine o’clock, i am seriously struggling.
  4. i may say i’m going to finally get around to reading books i want to read, but it isn’t happening. that’s what summer’s for. so to all of my books waiting for me in my nook reader, i’m sorry. i’m trying to hurry though.
  5. classical studies as a minor could not have been a better choice for me. during the times i thought i couldn’t take business classes any longer, roman archaeology or classical mythology was there to keep me sane.
  6. i am definitely a procrastinator, but a productive one. if i don’t want to finish one assignment i will complete everything else first. it’s bad (but it’s good), but sometimes really bad.
  7. i might have an “organizational problem.”
  8. heels ain’t happening. for special occasions, yes, but even putting booties on made me want to wear flats, sandals, or my lo-top converse.
  9. adventures can happen, but sometimes you just need to go for it. planning may help, but when you’re always doing work there comes the time when you need to let go. this summer i definitely plan on more “adventures”, and next school year i already have a few places to visit.
  10. yeah, i can eat healthy meals, but it is mostly due to a sweetgreen addiction. i could eat a salad from there every single day. thanks to the sweetgreen app, it makes this addiction easier… so it may be time to delete that.

while i do LOVE college, there are certain things i miss, such as cooking. yes, we have a common room with a kitchen i can use, but i’m not really feeling the fact that the majority of my supplies have been stolen. to the person out there who stole four of my cupcake tins, i hope you enjoy them, because i know i did… anyhow, i still cook at school (that’s an exaggeration as a friend remind me, i don’t do it as much anymore and i miss it) but when i do, i keep it pretty simple. once i get home though it’s a different story. tonight i made baked gruyere & cheddar lobster mac n’ cheese with a side of roasted parmesan garlic cauliflower. it was SO good, but i was happy to find that with a few tweaks i can make it at school. i just need to put all my stuff in lockdown, because next thing i know my food will be stolen off the stove. if it comes to this, i may ditch the whole lax approach to these quasi-robberies, and stage a full-fledged investigation… yeah, it may not go far, but hopefully all those days watching law and order: svu taught me something. as summer comes to a close, one thing i will miss more than anything is summertime cooking. there’s nothing like the fresh seafood and ripe fruit here in long island, so i hope to make the most of it before i head back to school! we threw together a delicious meal a few nights ago and me (along with my family) enjoyed the turnout. mussels and  scallops in a red sauce, with fresh pasta is SO good, and if you’re a fan of all of those foods, i promise you’ll like this. dessert was simple, but delicious: a rich chocolate pudding with fresh whipped cream, raspberries and frozen chocolate chips.

childhood dreams are something that i treasure… i still remember mine and today, a few of them have come true, for which i’m so incredibly lucky. others, time will tell, but the biggest dream i have is to own a cupcake shop! i have a name, store decor, flavors, color schemes, menus, etc. a little overboard, but let’s call it productive!

simply put i am obsessed with the olympics. since i’ve been able to watch them and understand what i was viewing i couldn’t get enough. my top three events to watch are swimming, gymnastics and beach volleyball (basketball is another favorite)! quick side note, i have a special place in my heart for michael phelps… i saw him for the first time at sydney but was so young and then when he emerged again at athens, i bought a fake engagement ring at claires and have saved it ever since. the delusional mindset of a fifth grader has faded, but my superstitious beliefs haven’t let me get rid of the ring. i still wear it whenever he swims (it reemerged during beijing), but don’t worry it isn’t on my ring finger (it’s moved over to the middle…)!

i had to put together a small olympics party with some themed food, tea sandwiches and mini hotdogs and then apple pie cheesecake for dessert, which is one of my new favorites. the decorations were easy to make, and i think i’ll have to save them!

Memorial Day Munchies

I decided two put together two of my favorite things today, and the combination was amazing. The chewy texture and delicious taste of lobster was only magnified by the best of comfort foods, macaroni cheese.

To make this you can either make macaroni and cheese from scratch (this is a great recipe http://www.kevinandamanda.com/recipes/side-dishes/mac-cheese.html) or use a boxed mix. If you’re going to use a boxed mix, go for something that is creamier or “deluxe.” I used steamed lobster, de-shelled it, chopped up the meat and tossed it into the pasta after it was done cooking. Next I added the cheese and other ingredients and it was done. Simple, easy, but so delicious! Finish it off with a glass of iced tea and you have a great summertime meal.
