{ shake shack is my biggest weakness… but the chicken sandwich is beyond worth it }

there are a lot of things that i write on this blog about that i love. one that i haven’t covered as much is food, and i think it’s about time it gets some love. i am lucky to live in a city that has countless options for amazing places to eat (along with options to grab a 3 a.m. snack when out and about…). there are countless markets that i would recommend making a stop at (gotham west market, urbanspace, and chelsea market to name a few), but you’ll never be at a loss for a great bagel, something to satisfy your sweet tooth, a slice of pizza, or even a salad if you want to get healthy.

i would like to thank buzzfeed for introducing me to all of the food pictured here. without their food posts, i would not be making those little cobblers pictured above this weekend. one of my favorite things about summer is summer cooking and being able to make food that isn’t too heavy. when it’s hot out, i need to eat something light (or that seems light) and when it’s colorful, like the food featured here, i’m all for it.

{ saint patrick’s day circa 1938 in new york }

behind christmas and thanksgiving, saint patrick’s day is one of my favorite holidays. growing up my mom would wake us all up with green orange juice and pancakes and we’d head off to school decked out in green bows, ready to see what the leprechauns had done to our classrooms. dinner would always be corned beef, cabbage, potatoes, and soda bread, the irish tenors playing throughout our house, and i was in heaven. my mom’s maiden name is dempsey (meaning proud in irish), and being half irish is something that i am proud of. see what i did there? it’s something that has been apparent in my catholic school saints projects (almost all of them were on saint patrick), my desire to one day visit ireland (a.k.a. the homeland), and my love for irish cuisine. i even tried out the whole irish step dancing thing when i was little, but i couldn’t tell my left from my right at the age of 4, so that endeavor ended pretty quickly. to make up for not being able to jig, i was (and am) able to get in touch with my roots through a little bit of cooking. one of my favorite things to make is corned beef, soda bread, and mashed potatoes with roasted carrots, but there’s nothing like something sweet. guinness chocolate cake with bailey’s irish cream cheese frosting is a game changer. if you’re in the mood to get cooking today, i recommend some of the food below.

on a final note, danny boy and the parting glass have a very special place in my heart, and i have them on repeat today. i used to sing danny boy with my mom’s mom, who almost always celebrated saint patrick’s day with us, whether we went to visit my grandparents in the city or if they came to long island to see us. to me she’ll always be here “in sunshine or in shadow” and this song reminds me of that.

IMG_8276 (1)my relationship with cooking is similar to the relationship that noah and allie have in the notebook… it’s something that’s just meant to be. sorry for how cheesy that was, but i’ve always wanted to use that as a comparison. for example, in fifth grade we were supposed to imagine what our future would be like and create a drawing to go with it. i drew myself in a doctor’s coat, working in a bakery, and holding a georgetown diploma in one hand. obviously a drawing that was completely realistic. so far i’m 1 for 3 on those counts (or since i’m still studying at georgetown it might be 0 for 3), and the doctor thing is probably not going to happen since i gave that dream up junior year of high school. who knows about the bakery though… maybe i can hit 2 for 3. before i start rambling, even though i’ve basically already started, i’m going to get to the point. i made one of the most delicious things i’ve ever had in my life thanks to this recipe. there were some issues with the recipe (due to the fact that i’m a college student), like when i used a meat tenderizer to mash cauliflower because we don’t have a potato masher… so that was fun. but seriously, this one is definitely worth trying.photo 1

enhanced-buzz-2818-1396058466-4news flash! i went vegan for lent/a 30 day challenge… for someone like me, who cherishes breakfast sandwiches, frozen yogurt and chicken and goat cheese in my salads, it wasn’t easy, but it hasn’t been too bad. now when i say day 2 was bad, i’m not kidding. most of it was definitely psychological, but at 10:45 that night i was laying in bed feeling weak and exhausted… putting me being dramatic aside, i actually wasn’t feeling too hot. that was march 18th, and here i am on april 2nd and i’ve gotten used to it. i do feel good, but there are a few things that i am more than missing a.k.a. all meat and eggs, and butter, and cheese… so actually i’m missing a lot. the great thing about this challenge/sacrifice is that i’ve been cooking a lot, and since i love to cook, it’s been fun. what doesn’t help is that i’ve been looking up both vegan and non-vegan recipes and i’m counting down until i can cook certain meals… during my research (which has become a daily thing) i’ve come across more than a few recipes i want to try out:

cherry-blossoms-2MTrecently i have been missing georgetown quite a bit. i love my school and the area, and there are those moments where i wish i could be walking past the surrounding townhouses on my way down to m street. for the weekend of the fourth i headed on down to dc and i could have stayed longer, but it definitely was what i needed. before i get completely sidetracked i decided to make some cupcakes and happened to be inspired by my little trip.

1. if you ever have the chance to visit dc, make sure to visit the georgetown area. just walk around and i promise you’ll love it.

2. one of the best times to visit dc is during the cherry blossom season.

3. everyone talks about georgetown cupcake and sprinkles, but baked + wired is where it’s at.

photo 1the temperature has finally changed and it is hot as hell, but in the words of icona pop, i don’t care, i love it. with this heat comes a change in clothing, aka i only have been wearing light-colored clothes or white, because i will sweat (or pass out) in anything else. the amount of white clothing i have is ridiculous, but at least i acknowledge it and put it to good use. i’ll be starting work on monday (which i am so excited about), and i’ve been trying to get some cooking in beforehand. if you know me, you know that i love seafood, and once the summer rolls around i can’t get enough of it. i’ve recently discovered grilled shrimp marinated in beer and old bay seasoning, and it is one of the easiest/best recipes ever. ever (huge claim i know, but i promise it’s the best). since it’s extremely hot i’ve been sending dramatic snapchats about the heat (my dog is the star of many of them), making quite a few runs for starbucks for passion iced tea lemonades,  and heading into the city whenever i get the chance. if you can experience new york in the summer (when the heat doesn’t make you feel like you have to stay inside) i highly encourage it. so until my next post i’ll leave you with some pictures of summer so far (and maybe even a gratuitous selfie, just because).photo 3

tumblr_mkik09TD5b1qd06o9o1_500first off, happy belated easter! christmas and i go hand in hand, but there is something super special about easter. it reminds me that spring is here (or should be) and bright colors can soon be worn freely. so last night while i got reacquainted aka straight up obsessed with pinterest i started creating boards and pinning and saving photos. i can already tell this is going to be an unhealthy addiction. so on my last night of break i’m going to call it a night early, but hopefully this rag tag group of photos can bring you some inspiration. p.s. if you’re in the area, ill be making those mini cakes pretty soon.
