i would like to thank buzzfeed for introducing me to all of the food pictured here. without their food posts, i would not be making those little cobblers pictured above this weekend. one of my favorite things about summer is summer cooking and being able to make food that isn’t too heavy. when it’s hot out, i need to eat something light (or that seems light) and when it’s colorful, like the food featured here, i’m all for it.

{ saint patrick’s day circa 1938 in new york }

behind christmas and thanksgiving, saint patrick’s day is one of my favorite holidays. growing up my mom would wake us all up with green orange juice and pancakes and we’d head off to school decked out in green bows, ready to see what the leprechauns had done to our classrooms. dinner would always be corned beef, cabbage, potatoes, and soda bread, the irish tenors playing throughout our house, and i was in heaven. my mom’s maiden name is dempsey (meaning proud in irish), and being half irish is something that i am proud of. see what i did there? it’s something that has been apparent in my catholic school saints projects (almost all of them were on saint patrick), my desire to one day visit ireland (a.k.a. the homeland), and my love for irish cuisine. i even tried out the whole irish step dancing thing when i was little, but i couldn’t tell my left from my right at the age of 4, so that endeavor ended pretty quickly. to make up for not being able to jig, i was (and am) able to get in touch with my roots through a little bit of cooking. one of my favorite things to make is corned beef, soda bread, and mashed potatoes with roasted carrots, but there’s nothing like something sweet. guinness chocolate cake with bailey’s irish cream cheese frosting is a game changer. if you’re in the mood to get cooking today, i recommend some of the food below.

on a final note, danny boy and the parting glass have a very special place in my heart, and i have them on repeat today. i used to sing danny boy with my mom’s mom, who almost always celebrated saint patrick’s day with us, whether we went to visit my grandparents in the city or if they came to long island to see us. to me she’ll always be here “in sunshine or in shadow” and this song reminds me of that.

there aren’t enough words to describe how much i love new orleans (and the south). yes, i’m a new york girl through and through, but there’s a certain charm down south. it helps that when i got to new orleans the weather was unreal (sunny and warm) and my first was a shrimp po boy, so i started off on the right foot. the mardi gras parades were unreal… my roommate (who is from nola) gave us tips on which beads you should save and how to catch them (no public indecency required), but i still managed to get annihilated by bags of beads hitting me in the face. i was able to get some beauties, but the beating i took on bourbon street one night from one solitary necklace was brutal. there’s pain and then there’s “getting whipped in the face at high speed with beads being flung from balconies” pain. i had my fair share of hurricanes, fried chicken, bourbon street, mechanical bulls, warm weather, front porches, southern charm, bead-related injuries, and crawfish and i absolutely loved it. so until next time new orleans, i’ll be missing you.

buying birthday presents isn’t always an easy task. sometimes the celebrant is hard to buy gifts for, the present isn’t just right, or you don’t want to spend a lot of money. in my opinion, it’s nice to give someone something special that you can do for them. for me that something special is cooking, and i figured gifting my friend with a “meal ticket” would be perfect.

as summer comes to a close, one thing i will miss more than anything is summertime cooking. there’s nothing like the fresh seafood and ripe fruit here in long island, so i hope to make the most of it before i head back to school! we threw together a delicious meal a few nights ago and me (along with my family) enjoyed the turnout. mussels and  scallops in a red sauce, with fresh pasta is SO good, and if you’re a fan of all of those foods, i promise you’ll like this. dessert was simple, but delicious: a rich chocolate pudding with fresh whipped cream, raspberries and frozen chocolate chips.

 

Memorial Day Munchies

I decided two put together two of my favorite things today, and the combination was amazing. The chewy texture and delicious taste of lobster was only magnified by the best of comfort foods, macaroni cheese.

To make this you can either make macaroni and cheese from scratch (this is a great recipe http://www.kevinandamanda.com/recipes/side-dishes/mac-cheese.html) or use a boxed mix. If you’re going to use a boxed mix, go for something that is creamier or “deluxe.” I used steamed lobster, de-shelled it, chopped up the meat and tossed it into the pasta after it was done cooking. Next I added the cheese and other ingredients and it was done. Simple, easy, but so delicious! Finish it off with a glass of iced tea and you have a great summertime meal.
